How do cops come after you when all the have is a security camera picture of you?

The crime happens in the dressing room, where there's not supposed to be any cameras, but the security camera is outside of the room, where the crime never took place. Besides, how long does it take a store, for example Puma, to check their inventory? Because if it's two days or later, they can't pinpoint the exact date on when the item was stolen, right?
